This picture was taken at the market in Kicevo, Macedonia during ajvar season - October 2004. Most Macedonians make ajvar every fall. It is delightful walking around in any town, village, or city in late September or early October and all you smell are peppers roasting. You roast the peppers, peel the skins off, grind them, boil them with oil and other ingredients, and voila – you have ajvar. I helped my host family prepare ajvar with 200 kilos of peppers. Yes, 200 kilos. It was a week-long affair.
