LapLap is a staple dish in Vanuatu. During pre-service training in October 2012, our group created the dish for our training village from scratch. One of the processess of making LapLap is 'scratching' or 'ras-rassing' the root crop until it is a cream cheese consistency and then you place it in banana leaves to cook on a fire. This photo is taken while I was 'ras-rassing' the manioc.
